When spring awakens in Seville, the city fills with light, colour, and the unmistakable scent of orange blossom. It is, without a doubt, one of the very best times to discover the magic of this extraordinary city. And if there is an authentic way to experience it, it is by enjoying a flamenco show in Seville accompanied by an unforgettable dinner.
At El Palacio Andaluz, we invite you to enjoy a truly unique experience: Flamenco & Spring Dinner in Seville, a perfect combination of art, tradition, and Andalusian gastronomy during one of the most special seasons of the year.
From March 15th to June 15th, our flamenco tablao in Seville opens its doors to those who wish to feel the purest essence of flamenco. Immerse yourself in an elegant and welcoming atmosphere where every detail has been carefully designed for you to fully enjoy the performance. You will be seated in our preferred seating area, ensuring you don’t miss a single gesture, footstep, or the intensity of our artists’ interpretations.
Spring nights to enjoy Seville’s finest flamenco
The experience also includes a complimentary visit to the Flamenco Dress Museum, a unique space that explores the history and evolution of Andalusia’s most iconic attire, the undisputed symbol of the April Fair. The visit takes place 30 minutes before the start of your chosen flamenco show.
For an hour and a half, flamenco comes to life on the largest flamenco stage in Spain, featuring a cast of highly acclaimed dancers, singers, and guitarists. Each flamenco style becomes an emotional journey: the power of bulerías, the depth of seguiriyas, the elegance of soleá, the joy of sevillanas. Live music, rhythmic footwork, and the energy of handclaps transform the evening into far more than a performance — it becomes a living expression of the Andalusian soul.
The staging also includes a flamenco adaptation of Carmen, Georges Bizet's famous work set in Seville, conceived as a tribute to classical Spanish ballet, a symbol of our tradition and culture.
Yet the experience extends beyond the stage. To celebrate this wonderful time of year, we have created a spring dinner inspired by traditional Andalusian cuisine and seasonal flavours. During the show, you will enjoy a carefully prepared menu made with quality ingredients, bringing together emblematic southern recipes, fresh local produce, and a selection of meats and fish.
The menu includes shared appetisers, a starter, main course, and dessert, all accompanied by a curated selection of wines and beverages designed to harmonise perfectly with the rhythm of the show.

Special Spring Menu
In our tablao, where flamenco vibrates with the intensity of Spain's greatest stage and more than 30 years of history, dinner is no longer a simple accompaniment but part of the show. Each dish pays homage to Andalusian tradition, its flavours, products and its vision of gastronomy as an encounter and celebration.
Andalusian Starter
Iberian ham and pork loin, Payoyo cheese, Spanish potato omelette and boletus mushrooms.
We begin as tradition dictates in the south: by sharing. The Iberian cured meats, slowly cured, celebrate the value of time and patience. Payoyo cheese, from the mountains of Cádiz, brings character and authenticity, evoking the landscape and craftsmanship. The Spanish omelette with boletus mushrooms combines simplicity and depth in a universal flavour. A first moment to relax, toast and let yourself go, while the guitar begins to play.
Starters
Cod salad with orange and black olives · Mixed fresh lettuce leaves
Inspired by Andalusian culinary tradition, this dish celebrates cod—an emblematic ingredient of southern cuisine—paired with the citrus brightness of Seville oranges. The interplay between sweet and savoury captures the essence of the Mediterranean, while the olives add depth and evoke the cultural richness that has shaped our gastronomy for centuries. Light, fresh and balanced, it is the perfect introduction before the intensity of the main course.
Main Course
Ham hock with Pedro Ximénez sauce · Potato gratin
A tribute to classic, home-cooked flavours. The pork knuckle, slow-cooked to achieve exceptional tenderness, is enriched by the gentle sweetness of Pedro Ximénez sherry, creating a silky, elegant contrast that elevates the meat. The creamy, golden potato gratin adds balance and a comforting warmth that recalls roots, tradition and cherished memories. A generous dish to savour slowly—like the rhythm of flamenco itself.
Dessert
Tocino de cielo
A jewel of Andalusian tradition, originally crafted by convent bakers. This delicate dessert embodies the refinement and heritage of the south. Its silky texture and subtle sweetness offer a smooth and memorable finale, like the lingering echo of a guitar that closes an unforgettable performance.
Spanish Wine
Wine accompanies the entire experience, because in Andalusia, the table is a place for conversation, celebration and shared emotion. Every sip enhances the flavours, the music and the spirit of the moment.
Flamenco, Gastronomy and Tradition
Since 1995, our tablao has been the setting for unforgettable evenings. Here, tradition can be heard, passion can be tasted, and each dish follows its own rhythm—bringing together culture, flavour and emotion in perfect harmony.
