Overview

We will visit the Gonzalez Byass winery, where the world-famous Tio Pepe sherry is produced. Learn about the different types of this fortified wine: the crisp, dry fino; nutty amontillado; salty manzanilla; and dark, pungent oloroso.

The sherries produced in this bodega are made from the finest Palomino grapes, which results in a young wine that is meticulously blended with mature ones. This process ‘freshens’ the older wines while also adding character to the younger ones. They are then stored in old oak barrels and left it for at least three-and-a-half years in beautiful, cathedral-like bodegas. Brandy is also produced in the Gonzalez Byass bodegas.

There are many fine traditions associated with sherry but perhaps the quaintest is that of remunerating Britain’s Poet Laureate with a sack of sherry (the equivalent of 720 bottles). When Carol Ann Duffy, the latest holder of that centuries-old title, learned of the perk, she headed straight to Jerez de la Frontera… and penned an ode to sherry that begins: ‘Who wouldn't feel favoured/ at the end of a week’s labour/ to receive as part-wages/ a pale wine that puts the mouth in mind of the sea...’
