These dances are the embodiment of a people’s journey from a powerful empire to conquered people in a matter of years to centuries of colonial rule and then independence. The restaurant is tastefully and atmospherically decorated in beautiful Andean textiles, which adds to the sense of expectation. The dishes on offer during the buffet change according to the season but among the many Peruvian specialities that you may find are mint potatoes, tacu tacu (pan-fried rice and beans) and butifarra (bread stuffed with ham) as well as trout ceviche and alpaca carpaccio. The desserts are delicious and this being Peru, sipping on a pisco sour is almost compulsory (the national cocktail made of pisco, lime or lemon juice, syrup and egg whites).
